Homemade Chicken and Dumplings













This is a comfort food that I enjoy on a cold day. One of the reasons I like this recipe is because I know I always have these ingredients available. I keep a package of chicken in the freezer and of course flour and butter are always on hand at my house.  I have made this recipe for my husband, my sister and my niece and they have all enjoyed. I hope you enjoy as well!


Ingredients
Chicken Thighs or Chicken Legs (2 1/2 - 3 pounds)
1/4 cup chopped white onion
1/2 cup chopped carrots
Salt
Pepper
Garlic Powder
Seasoning Salt
Poultry Seasoning
2 Tablespoons Oil


Dumpling Ingredients
2 cups flour
1 pinch salt
1/2 cup milk
2 Tablespoons butter
(Add more or less milk, enough to make dough)

Directions
Heat oil in Large Pan
Place seasoned raw chicken and chopped onions and carrots in the pan and cook completely (about 20 minutes, test chicken).
Meanwhile:
Mix flour and salt. Work in the butter with fingertips. Gradually add the milk. Mix together.
Dust hands and cutting board with flour. Roll and flatten the dough to 1/2 inch thickness, cut in 1 inch squares. Take chicken out of pan, remove meat from bone, return chicken meat to pot and add 4-6 cups water to make broth, season broth with more seasoning salt, garlic, pepper (season to taste). Heat to a boil.
Drop flour dumplings carefully into the hot broth and simmer the chicken and dumplings 10 minutes longer, making sure to ladle broth over the dumplings to submerge them as they cook.


Top off with a few sprinkles or sprigs of parsley or chopped green onions.

Scotties



Also known as a Scottish Egg. My mother used to make these for us for breakfast and I was in love. I prefer not to fry them or coat them in bread crumbs, this is the no-fry recipe that I know and love.

Preheat oven to 350 degrees

Ingredients
8 Eggs
1 Roll Bob Evans Mild Sausage


Boil eggs in water until hard boiled,  for at least 10 -15 minutes. Break shells of eggs and cool completely.   Divide the roll of sausage into eight pieces, wrap each piece of sausage around the hard boiled egg, make sure each eggs are completely covered and place in a 8 x 8 baking pan.

Bake for 30 minutes or until sausage is completely cooked through.

Serve for breakfast, lunch, appetizer, or dinner - delicious!


Garlic Crab Legs


I used to boil my crab legs in tons of water, over time I realized that the crab flavor was being watered down and began searching for other cooking options. I tried flavored crab legs at a seafood restaurant one day and realized I found my answer. I began to broil the crab legs and add flavor to the shell while baking. Try this recipe!

Preheat oven to Broil

Ingredients
Crab Legs
Garlic Powder
1/2 Cup Butter
1 Small Lemon

Rinse and pat dry crab legs.  Spread crab legs on one layer on a cookie sheet, broiling pan or 9 x 12 baking pan. Sprinkle garlic powder evenly on both sides of the crab legs.

Broil for 7- 10 minutes or until crab is hot to the touch.

Melt butter, cut the lemon in half, adding the juice from half the lemon to the butter.

Use the other half of the lemon for garnish.

Goat Cheese Stuffed Portabello Mushrooms

This is one of my favorite recipes, I just tried this last week and when I say amazing I mean 
A-M-A-Z-I-N-G! Try this recipe and you'll have to share this with friends.

Preheat oven to 350 degrees


Ingredients
1 log Goat Cheese
Portabello Mushrooms (Baby or Large)
Olive Oil
Kosher Salt
Cracked Black Pepper
Garlic Powder
Lemon Pepper
Parsley

Rince, pat dry, and remove stems from portabello mushrooms.  Sprinkle salt, pepper, garlic powder and lemon pepper on mushrooms.  Spread olive oil on 8 x 8 baking pan. Place mushrooms in pan and bake for 5-7 minutes, remove from oven drain mushrooms and stuff each mushroom with a slice of goat cheese.

Bake mushrooms for another 5-7 minutes or until cheese melts.
Garnish with Parsley.

Serve with a glass of your favorite red wine and enjoy!


Punchbowl Cake



If you want a desert that seems like you put effort into and tastes delicious, then try this recipe.

Ingredients
2 cans Cherry Pie Filling (or your favorite, apple, strawberry, peach)
1 container Whipped Cream
2 cans Ready Made Vanilla Pudding (or homemade, your choice)
1 Louisiana Crunch Cake

Please use a glass punchbowl to see the layers of the cake. Cut the cake in 1-inch thick slices.
Layer the punchbowl starting with cake, pie filling, pudding, and whipped cream. You may be able to do 3-4 layers, ending with the Whipped Cream.

Cover the cake and chill in the refrigerator for about 1 hour.

Serve in a Martini glass at your next party!
